When features are removed from WordPress it is typically for a very good reason, and only done after extensive discussion. The argument that the removal of the title field disrupts a workflow is a bit of a red herring: if the workflow includes the title tag, then the workflow goes against recommended practice. Things change and improve over time and we need to change with them to stay ahead. This is a perfect example of evolution in software. Move with the flow.
