The version of the block editor that is in core seems to be stable and compatible with plugins etc. The points about inline styles I have taken on board and if these are not done to some industry standard, that is concerning. The Gutenberg plugin is another matter. From what I can see this is the testing ground for what we will get in Wordpress in the future and, yes, you will experience breaking changes with plugins that haven’t quite updated to be compatible. Is it just that the Gutenberg plugin is always ahead of the curve? It reminds me of the transition form Mac OS 9 to OS X twenty years ago. That was messy too if you where deeply embedded in the older OS way of doing things. Obviously, that aside, there are issues for theme developers in the way Automattic are communicating on this and you would wonder why WooCommerce still has a distinctly classic look.
